Steps to Make Katori Chaat
Chat is one of the favourite Indian snack. Katori Chat is one of the favourite chat one can have. Yeah , making it is quite time consuming. But if you have already prepared katoris then it will be much easier.
You can also put pomegranate seeds , cashew and raisins in the stuffing. It will enrich the taste of it.
Note : Always fry katoris in low flame to make it more crispy and store it in air tight container.

Ingredients

For Dough–
2 cup maida
2 tsp oil
½ tsp ajwain
Salt as per taste
Water to knead dough
Oil for frying katoris
- For Stuffing-
4-5 boiled and mashed potato
1 cup chopped tomato
1-2 cup finely chopped onion
2 cup boiled black gram
Salt as per taste
- For Green Chutney-
1 cup coriander leaves
4-5 green chilly
Salt as per taste
½ tsp jeera
1-2 chopped tomatoes
- For Tamarind Chutney-
½ cup tamarind
2 tsp jeera
½ cup jaggery
1 tsp red chilli powder
Salt as per taste

Sev ( mixture )

Step by Step Instructions
For Making Tamarind Chutney –
Step 1
Take a bowl of hot water. Put tamarind in it after washing/cleaning it 2-3 times.
Step 2
Once it gets softened, mash it properly and remove the unwanted particles.
Step 3
Filter it in a deep end container which you can use for boiling as well.
Step 4
Put the deep end container on the gas stove. Add red chilly powder ,jeera and salt.
Step 5
Once it boils properly and gets thicken then start adding jaggery to it.
Step 6
If you want tamarind chutney to be more sweet then you can add more jaggery to it.
Step 7
Keep boiling it for more than 15 min. You can preserve it in the fridge for around 5-6 months in a closed air tight container.
For Making Green Chutney –
Step 1
Take a grinder jar. Put cleaned and chopped green coriander , jeera , salt , tomato , and green chilly.
Step 2
Grind it well so that no big particles left it in it. If required add a little bit of water.
Step 3
Once it is grinded properly , pour it in a bowl.
For Making Stuffing –
Step 1
Take a bowl. Add mashed potato , tomato , black gram , onion and salt as per taste. Mix it well.
For Making Dough and Katoris-
Step 1
Take a bowl. Add maida , oil ,ajwain and salt. Mix it well.
Step 2
Start adding water slowly and knead a dough not too hard nor too soft.
Step 3
Keep the dough covered for 15-20 minutes.
Step 4
Make small balls out of it and use a roller , make small roti of it.
Step 5
Take small katoris/bowls. Put a little bit of oil at the back to stick the puris which are made.
Step 6
Once it is stuck , press the corners well and make holes using a fork.
Step 7
Take a pan. Put oil in it for frying. Once it is heated up , put the katoris in it in the same manner we put katoris on the table.
Step 8
Fry it in low flame to make it crispy. It will get separated from katori on its own. If it doesn’t get separated then take it out , with the help of a knife or fork separate it from katori and then fry it.
For Making Katori Chaat-
Step 1
Take a fried katori , put stuffing material 2 tsp , green chutney , tamarind chutney , curd and sev (mixture).
