Steps to Make Instant Pot Eggplant…..

In short its a baingan ki sabji which is made instantly with just 2-3 whistles. You can made it with less oil as well and with less spices as well. 

It’s a kind of mashed brinjal in a onion tomato curry.Cooking it in a pressure reduces cooking time as well and enriches the taste as well. 

Also some people likes smoky flavour , you can try keeping a bowl with burning coal and cover the lid for 2-3 min. It will add smokey flavour to your instant pot mashed brinjal. 

Normally cooking any vegetable like regular process is time consuming but cooking vegetable in a pressure cooker doesn’t take much time and efforts are less as well.

So here is the easy recipe for you guys to cook tastier and time consuming instant pot eggplant. 

If you want it like bharta , you can try mashing it with the masher and cook it for 2 min.

Ingredients

  • 3 tbsp oil

  • 2 tsp cumin seeds

  • 1 cup chopped onion

  • 1 cup chopped tomatoes

  • 2-3 tsp crushed garlic

  • 2 tsp chopped green chilly

  • 1-2 tsp grated ginger

  • 1 large potato cut in medium sized cubes

  • 1 large eggplant/brinjal cut in small cubes

  • Chopped coriander for garnishing

  • Salt as per taste

  • 1 tsp red chilly powder

  • 1 tsp turmeric powder

  • 1 tsp coriander powder

  • ½ cup peas

Step by Step Instructions

Step 1

Take a pressure cooker. Add oil in it.

Step 2

Add cumin seeds.Add ginger,garlic and green chilly.

Step 3

Add onion and tomatoes.Add brinjal ,potato and peas. Add all spices and stir it for 3 min.

Step 4

Add water.Close the lid. Make sure whistle is there on the lid.

Step 5

After one whistle , keep the flame low for 10-15 min.

Step 6

Once pressure is released , garnish it with coriander leaves. Mash it if you want to have it like bharta.
