Steps to Make Instant Jalebi…
Jalebi is one of the famous Indian sweets which is loved by everyone. Most of the people like to have it with poha. There are many combinations one can have with jalebi , either it be poha-jalebi, rabdi-jalebi , dudh-jalebi etc.
Usually in small restaurants they prepare jalebi batter and keep it overnight for fermentation. But here we are going to make instant jalebi.
Here is my side of the story while making instant jalebi. During lockdown, my husband was literally craving for jalebi and poha. So one day he woke up and started saying that today I will have only poha jalebi and nothing else. I had no other option than making jalebi.
1 cup maida
1 cup water
1 tsp ghee
1 sachet of eno
½ tsp food colour (orange)
1 cup water
2 cup sugar
3-4 cardamom seeds
Oil for frying
Step by Step Instructions
For making sugar syrup, take a deep end pan which is not much broad. Add sugar and water. Add cardamom seeds and food colour. Boil it till sugar dissolves and turns to 1 string of sugar syrup.
For making jalebi batter, take a bowl. Add maida , ghee and eno. Mix it well. Then add water slowly and mix it so that it has a good consistency.
Once the batter is ready , take a flat container. Put oil in it.
Make a cone with a thick poly bag or carry bag. You can take things like empty oil pouches,salt pouches etc. Put batter in it and tie it and then cut the corner little bit as per your choice how much thick jalebis you want.
Once oil is too hot then take cone and make jalebi in the pan directly. Fry it till it turns very light golden brown. Take it out and put in the sugar syrup.
Once it absorbs the sugar syrup properly take it out in a seiver so that the extra sugar syrup rinses out.
