How to Make Gatte ki Sabji
Gatte ki sabji is one of the famous rajasthani dish which is liked by everyone.It is made of gram flour mixed with little bit of spices.
You can make it with either thick gravy or light gravy.
In rajasthan , people used to make gatte ki sabji using curd , onion and garlic basically. But in punjab , people used to make gatte ki sabji with onion and tomato curry.
Here we are going to make Punjabi style gatte ki sabji with tomato and onion gravy.
You can serve it with any kind of roti or jeera rice.
- For making Gatte-
- 2 cups besan
- 1 pinch asafoetida
- ¼ tsp turmeric powder
- ½ tsp ajwain
- ½ tsp red chili powder
- 1 tsp coriander powder
- Salt as per required
- 3 tablespoons oil
- 2 tablespoons curd
- Water as per required for kneading
- 4 cups water for cooking gatte
- For making Gatte ki Sabji (gravy)-
- 3 tablespoons oil
- 1 teaspoon cumin seeds
- 2 large/medium onion paste
- 3 large/medium tomato paste
- 2-3 tbsp ginger,garlic,and green chilly paste
- ½ teaspoon turmeric powder
- 2 teaspoons red chilli powder
- 1 tablespoon coriander powder
- Cooked gatte water as required
- salt as required
- Coriander leaves for garnishing
Step by Step Instructions
For making dough for gatte –
Note : Knead should be done properly so that the dough is not much hard.If it is hard then the gattas of sabji will hard after boiling it .So knead it like a puri dough not much hard neither too soft and then keep it for atleast 15 min.There should not be any cracks in the dough.
Take 2 cups of gram flour(besan) in a large bowl.
Add asafoetida,turmeric powder,ajwain,red chili powder and coriander powder.
Also add salt as per taste.
Add oil and curd. Mix everything properly.
Add water as required to knead.
Once kneading is done properly and dough is ready, then take small part of dough. Roll it in a cylindrical shape.
Cooking Gatte –
Take a deep pan or a kadai. Put 5-6 cups of water.
Heat the water. Put the cylindrical shape gatte in it.
Boil those gatte in high flame with the lid on it.
Once the gattes are cooked, they will float on top.
Drain out the extra water and keep the water aside.
Cut cylindrical shape gatte in medium size parts.
Making gravy for Gatte ki Sabji –
Take a kadai or deep pan. Put oil.Once oil is heated up, put cumin seeds.
Put ginger,garlic and green chilly paste.Once it turns into light golden brown, add onion paste.Add salt as per taste. Mix it well.
Once onion paste turns into golden brown colour add tomato paste.Add red chilly ,turmeric powder , coriander powder. Mix it properly.Oil will be on top of the paste if the paste is cooked or fried properly.
Add 2 cups of water which we kept aside after cooking gatte.Boil it properly in a low flame.Once it is boiled properly , add the cooked gatta in it.
Put the lid on it and cook it for next 15-20 min in low flame. Also keep checking if it has less water or not. If required add the water which we kept aside.
Sprinkle some coriander leave for garnishing,Your gatte ki sabji is ready to serve it with jeera rice or roti.
