How to Make Egg Bhurji Curry
Egg bhurji curry is very easy to prepare and its something different from the regular egg dishes. Its gives you taste of both spicy and tangy flavours at the same time.
Mostly egg bhurji curry can be found on highway dhabas. You can have it either with rice or roti/nan/tandori roti.
- Eggs – 4
- Onion – paste of 1 large onion
- Tomato – paste of 2 tomatoes
- 2 tablespoon paste of ginger , garlic and green chilly
- Oil – 2 to 3 tablespoon
- Salt – as per taste
- Red chilly powder – 1 teaspoon
- Turmeric Powder – 1 teaspoon
- Water – 1 cup
- Coriander – for garnish
Step by Step Instructions
To make this easy egg recipe, first add ginger and garlic pastein a kadahi with oil.
Once its golden brown add onion paste along with salt.
Add tomato paste , turmeric powder , chilly powder.Keep it on low flame for sometime till the paste is cooked properly.
Add a cup of water . Boil it for 2-3 min.
In another deep-bottomed pan, break the eggs and prepare bhurji (scrambled eggs).
Add this bhurji to the mix that has been kept aside, and mix them well.
Garnish with chopped coriander leaves and savour the taste.
