Steps to Make Dhokla…

Dhokla is one of the famous gujrati dish but it is loved by whole country.Everyone prepares it in their own way and own set of ingredients.First set of ingredients are besan and yogurt. Second set of ingredients are suji/rawa and curd. And the third set of ingredients are rice and urad dal. 

Basically dhokla is steamed and then sauted with cumin,mustard seeds and curry leaves.

It is one of the healthy dish as it contains very less oil. 

Sometimes , my mother-in-law prepares sandwich dhokla as well.Later on I will post recipe for sandwich dhokla.

Here we are going to prepare dhokla with besan and curd.

Ingredients

  • 1 Cup Besan
  • 1/3 Cup Suji/Rawa
  • 1/2 Cup Curd
  • 1 tsp eno fruit salt/baking soda
  • 2 tsp lemon juice
  • 2 tsp ginger-green chilli paste
  • 1 tsp salt as per taste
  • 1/4 tsp red chilli powder
  • 1/3 tsp turmeric powder
  • 2 tsp sugar
  • A pinch of Asafoetida (Heeng)
  • 3 tbsp oil
  • 10-15 curry leaves
  • 5-6 slitted green chillies
  • 2 tsp lemon juice
  • 2 tbsp chopped coriander leaves for garnishing
  • 1 tsp mustard seeds
  • 2 tsp sugar
  • 1 cup water

 

Step by Step Instructions

Step 1

Put besan,suji,red chilli powder,turmeric powder,sugar and heeng in a bowl.Mix it well.

Step 2

Add curd to it. Mix it. Also add water slowly and start mixing it till it have proper consistency and no lumps.

Step 3

Add lemon juice,oil and ginger-green chilli paste to it. Mix it again.Keep the batter for 10-15 min.

Step 4

Meanwhile , grease a deep container/plate.

Step 5

Take a deep container or a pressure cooker .Pour water in it.Start boiling it.

Step 6

Add baking powder/eno in the batter.Stir it quickly in a single direction.Pour the batter in a greased container.

Step 7

Put the greased container in the deep container.Cover it with a lid.If you are using pressure cooker for steam , then don’t put whistle on it.

Step 8

Keep flame high for 15 min.After 15 min,insert knife to check whether dhokla is cooked.If knife comesout clean , then it is cooked and if better gets stuck in the knife then it needs more 3-4 min.

Step 9

Once it is cooked properly,take out the container.Let it cool down properly first.If you have made steamed dhokla in a deep end container then tap the sides gently and invert the dhokla in a plate and then cut it into pieces. If you have made steamed dhokla in plate then cut it in pieces and take it out.

Step 10

Take a pan , pour water.Once water starts boiling , add sugar.Mix it till it dissolves in it.Spread it over dhokla. This step purely depends on you if you want sugary water over your dhoklas or not.

Step 11

For dhokla tempering , take a pan. Add oil. Once oil is heated up, add mustard seeds ,saute it till it splutter. Add green chilly and curry leaves , fry it for less than a minute.

Step 12

Spread this tempering over the pieces of dhokla. Garnish it with chopped coriander leaves.
